Sorry I'm posting before searching (too much), but I'm scared of reading thru the huge number of pages on each of the Google Voice apps on the homebrew list. Can any of them do a purely VoIP/WiFi call using the GV number, or do they basically initiate a call between the Sprint number and the dialed number, appearing to the dialed number as the GV number?

Google Voice is not a VOIP service.

The only part that can be done on the data end is initiating the call with Google talk. The apps have the option to do that instead of dialing into your number and doing the number dial dance. A few seconds after the data packet is sent you get a call from your google voice number which as soon as you pick up dials the person you were trying to call.
