I'm currently using Govnah with a 125 / GHz profile and a screenstate switch but I've been noticing that it's been locking up a few times when the proximity sensor has cut the screen. Does Govnah switch to 125hz when the proximity sensor is activated? Is this what's causing the phone to freeze at the exact same moment or is it just coincidence?
I switched the profile to 500 / 1GHz and I don't get this problem anymore but my battery life is reduced!

Can anyone shed some light on this?

My understanding is that anything below 500mhz will have stability issues and don't really save any battery life. If you really think it's hurting your battery (I didn't see that when I tried it) than try 250 instead...
