Is there a way to reset my wifi settings (what networks is auto-connects to, etc.) without reseting the entire device? Thanks for the help.

Aside from clearing out the networks one by one (ie: when connected, click 'forget network', nothing easy.
However: Save/Restore backs up & restores your WiFi settings for you, I'm sure this would turn into two potential options: a) If you know somebody with a Save/Restore WiFi 'empty' profile, you could load that b) I'm sure there are other folks who can point you towards how to swap in a clean data set without resetting the phone (ie: the same way Save/Restore swaps in a backup) Appears to be a file named 'prefsDB.sql', FYI.
