I know how to hide an app but once hidden, is there a way to unhide it?

Go into device info. At the bottom, select more info. Then at the top, select software. It will give you a list of all the apps you have installed. Tap the one you want to unhide, then select show.

What about if you accidentally hid the Phone app? Doesn't seem to show up in the app list.

Keep scrolling down the list, past all your downloaded applications. You will find the built-in applications at the bottom.
