Just wondering if I can bypass this upgrade if I do not use Exchange?

It's going to update automatically if you don't do it.

I believe there might be a patch but I don't see why you wouldn't update. It only takes 2 Min's to run this update and it just changes the calender I have heard you don't even need to remove your patch's.

I was wondering the same. I hate removing my patches, especially when I just got my Pre where I want it to be. Ughk.

There is a way to keep it from updating but you have to gain root access. You can do so through WebOSQuickInstall under tools>Linux command line. Type in the information located in the following link.
