    I have this email account which I access via IMAP. It's an Exchange server which permits IMAP access.

    My "deleted items" server folder configuration is set correctly on the Pre, but it appears that when I delete messages on the Pre, they are just marked for deletion on the server -- the messages aren't removed from the Inbox. In Entourage (and I'd assume other email clients), they're still there.

    Why is this / how can I make "delete" actually delete items to "deleted items"?

    There are different types of IMAP settings, and the standard one won't permanently delete emails from the server when deleted remotely via IMAP. If you use regular Exchange server access, it will delete them.
