I am using Chatter EX plugin successfully to connect to Exchange Server at work.

Page 7 of Chatter manual says (see, I read the manuals!):

"Almost all MS Exchange Servers support IMAP"

How do I verify if my server does this?

The question is whether the server administrators have enabled it; you would have to ask...

If it is enabled, you will want to make sure its available outside of their firewall.

Is there no other way than asking? Like by setting up an IMAP account in Chatter and testing?

What settings (IMAP) will I use if I know the settings for a functional EX account?

You can test it by setting up an account in chatter. However, it would be easier to test it out through mail2web.com. Go to mail2web.com and click the "Advanced Login" link. Then you can put in all the information you want to test (make sure you select IMAP). I would also suggest trying SSL IMAP as its much more secure.

The imap server name should be the same as your exchange server's fully qualified domain name (i.e. mail.yourdomain.com).
