    I know that Treo750v works in Japan because is 3G. I think this model don't work because is only Quad band; is it true?

    If there is GSM service (or providers) in Japan or in any part of the world, the 680 will work.
    As for 3G, same anology applies. If any GSM carrier in Japan or anywhere else offers EDGE, phone will work. EDGE isn't really considered 'true' 3G in most quarters, but it's definitely faster than ol' man GPRS. Treo 680 supports GPRS/EDGE, but not UMTS/HSDPA, which is a bit disappointing in some quarters.

    I believe Japan implemented WCDMA (UMTS) without GSM, so a device could really work with UMTS without being able to fall back to GSM.

    That means Treo 750v in, Treo 680 out.

    The 680 won't work in Japan. However the 750 should theoretically be able to be use in some places in Japan (basically where ever Vodaphone Japan is present).

    Both.

    Its not just Vodafone (now softbank mobile) only, its also NTT DoCoMo. They have recently released the HTC Hermes on their network for example.

    As Surur said, both. The 680 is GSM only. There are no GSM providers in Japan. Vodaphone Japan has UMTS, but the 680 doesn't have this at all.

    Ah, I hadn't heard that! Even stronger arguement for getting a UMTS phone.
