Recently, I have learned that when I e-mail someone without my contact info (from my GMail account from a WebOS device or not) my display or nickname is a name I thought I changed years ago.

I simply want it to show my name.
    - I've edited my name in Gmail settings (Settings > Accounts & Import > Edit info).
    - I've believe I've edited my Google Account Settigns as well (Settings > Accounts & Import > Edit info > Google Account Settings > Edit your personal info).

Neither of these showed the name I wanted to change. Where is the display/nickname input box???

From Google Mail being sent from your phone:

To change you nickname in Gmail on the device go to the following:

Mail>Preferences & Accounts>(select gmail account)>Full Name (enter the correct name you want displayed here)

Ahh... I didn't realize it was only happening from my webOS e-mails. You are correct, thank you very much!
