I was wondering if there is an app (paid or free) which allows one to take notes using a stylus on the HP TouchPad. Anyone?

App called nuttypad in development (google the thread).
It will allow you to take notes via handwriting. I don't believe the app is intended to convert the handwriting to digital text.

I'd be interested as well. Not a fan of this keyboard.

Has anyone found a decent stylus to use with the Touchpad ?

The only ones I have seen have all had a large tip and dont really seem that practical

all capacitive touch stylus's have a "large tip" but thts just to mimic your finger and because capacitive touch screens are made to detect fat finger touches the stylus's are also made to cater to that sort of touch recognition.

I bought five of these, worried they might be crap, and am still on my first one. Works great and cheap. Aluminum Alloy Touchpad Stylus Pen for Apple iPad/iPad 2 - Black - Free Shipping - DealExtreme
