If I can view this 1080p video wireless on the touchpad, does that mean it is 1080p capable? I always thought 720p was the max?

it is probably downscaling the resolution on your touchpad

The touchpad has a max resolution of 1024 x 768 so playing 1080p (1080 pixels high) would be scaled down. Think of your device as being able to play max of 768p (if there was such a thing) full without scaling.
    HP Touchpad 16GB, webOS 3.0.4, UberKernel 3.0.4-68 @ 1.5Ghz
HTC Evo 4G, Mynís Synergy ROM RLS1 (Android 2.3.3)
    B&N NOOKcolor, Phiremod 7.1 (Android 2.3.7), @ 1.1Ghz

even 768p would be more than screen (as 720 is 1280x720...)

Yep. 720p and 1080p reference to the 16:9 scale compared to the TP's 4:3

Even 720p will scale down unless you fill/stretch in the rest of the screen, but that crops the left and right sides.
